Mini 6" Red Velvet Cheesecake Layer Cake (Made in a DIY disposable heart shaped pan) A little late than never... but I finally got a minute to share my Valentine's Day dessert with you! With its cute heart shape and small batch size, this cake is not only perfect for Valentine's Day but it is also great for an Anniversary or a romantic dessert for two. You can also skip the homemade heart pan and make a classic round cake to use for a party or special occasion any time of the year. This dessert involves a little extra work than simply making a traditional cake, but is so worth it. It is inspired by The Red Velvet Cheesecake from the Cheesecake Factory restaurant, but with my own personal miniature small batch twist and the addition of my original DIY disposable pan to create a heart shaped cheesecake without having to buy a springform pan!

Individual Brownie Sundaes After making my individual cookie sundaes and my individual apple crisps, I had to recreate the idea in brownie form for all you chocolate lovers out there (and because Valentine's Day is coming up and this would be a perfect way to impress that special someone *wink*wink*). This mini-batch recipe for "Brownies for 2" is quick and simple to put together. The fudgy brownies bake up perfectly in individual ramekins and topped with ice cream, a cherry and the works, and you have two incredibly easy and delicious brownie sundaes great for a weekend treat for the kids or a romantic dessert for 2. The recipe also doubles easily if you want to make more.
I came up with this recipe while competing on Food Network's Cupcake Wars: Battle of the Champions "Rose Parade" episode in season 2, after my WIN on the series premiere show! The theme of the show was to create cupcakes for the 2011 Tournament of Roses. I knew I wanted to top my cupcake with the iconic red rose in their logo, so I thought it would be perfect to make my fluffy, moist red velvet cupcakes. To really tie the theme into my cupcakes, I added a fragrant touch of rose water into the frosting. Click here to see the episode recap with photos and a highlight video (coming soon)!
I topped these with some handmade fondant roses and a veined leaf fondant cutter. If anyone is interested in a tutorial on how to make these roses let me know. I used a similar technique as my Gumdrop Roses.
Chocolate Covered Valentine Oreos Here is a simple and fun way to dress up plain Oreo cookies for Valentine's Day, and anniversary or to show that special someone you care. Guess what inexpensive household item I used to make them in?!
Besides the obvious 3 reasons I LOVE Valentine's Day: everything is pink, frilly and covered in chocolate... I have 3 other reasons to be extra excited about the season of LOVE this year... and I hope they get you a little more excited too!
